Raw honey tends to crystallize relatively quickly.
It turns milky white and becomes very thick, like the jar on the left.
This is totally natural and nothing to worry about.
In fact many people like their honey in the thick crystallized form.
It is easy to spread and if you are adding a spoonful to your cup of tea it just melts right in.
If you want to return your honey back to it's liquid state, like the jar on the right,
you just need to heat it to 100 -110 degrees for a short period of time.
You do not want to over heat it and definitely do not use a microwave.
There are lots of options that will work.
- If you have a patio or some other spot arounf your house that gets to be around 100 degress on a sunny day, then just put your jar out there for a day.
- Pour some boiling water into a bowl and then place your honey jar in the bowl and leave overnight.
- If you have a green house that gets to be 100 degrees in the rafters, just put your jar up there for the day
- really anywhere that you can safely heat the honey to a temp of 100 to 110 will work perfectly.
