Raw honey tends to crystallize relatively quickly.
It turns milky white and becomes very thick, like the jar on the left.
This is totally natural and nothing to worry about.
In fact many people like their honey in the thick crystallized form.
It is easy to spread and if you are adding a spoonful to your cup of tea it just melts right in.
If you want to return your honey back to it's liquid state, like the jar on the right,
the best way to do this is to use warm water.
You do not want to over heat it and definitely do not use a microwave.
Bring a sauce pan of water to a boil on the stove. Once boiling, remove the pan from the stove and wait 5 minutes for the pan and the water tempatrue to stabalize.
If you don't give the metal and the water time to stabalize in tempature the bottom of your jar may break off.
Now put the honey jar in the hot water, put the lid over it and leave over night.
In the morning the honey should be decrystallized.
If you have a patio that gets to be around 100 degress in the sun, then just put your jar out there on a sunny day
we have a green house and the temp in the rafters on a sunny day gets to be around 100 degrees, so seting a jar on the rafters takes care of it.
